Overview

ish oil contains essential fatty acids that are necessary for human health. The protective effect of fish consumption is particularly evident in cardiovascular and chronic inflammatory/(auto)immune diseases. The authors reviewed the physiological effects of n-3 polyunsaturated fatty acids (PUFA), and their content and composition in fish meat, including carp. Excessive ingestion of certain fish and other seafood and freshwater fish from contaminated localities may contribute to substantial exposure to various xenobiotics. One way to lower the potential risk from consumption of contaminated food is to include Czech farmed carp (which meets all the hygienic safety requirements) in the diet.

Key words:
nutrition, freshwater fish, Cyprinus carpio, xenobiotics, mercury, polychlorinated biphenyls, phthalates, n-3 polyunsaturated fatty acids.
